Lucy and Her Journey with Plant-Based Nutrition
What inspired you to become a dietitian?
I've always loved cooking since I was young, so it felt like a natural choice for me to pursue a career as a nutritionist (once I discovered what it entailed). To me, it represents the perfect combination of science, cooking, and psychology, offering new things to learn each week!
When did you become plant-based?
I first encountered plant-based eating at university, but it was during my stay with missionaries in Africa that I became truly convinced of its ability to combat disease. Since then, I've felt a strong obligation to educate people about what I consider the healthiest diet on the planet, advocating for it rather than something more "moderate."
Why are you plant-based?
Plant-based diets not only exhibit significant influence over diseases and symptoms of irreversible conditions, but they are also the most sustainable dietary choice, making them the kindest option for the millions of people facing food scarcity daily. Recognizing the horrors of animal agriculture, I strive to minimize my contribution to animal suffering.
Why did you choose to be flexitarian?
I uphold a flexible eating pattern as I believe that accepting food prepared by others is a way to express and receive love, fostering cultural exchange. While I maintain a vegan diet at home, I remain adaptable in cultural or social settings.
