Banana Bread Baked Oats

This is maybe THE most simple single-serving breakfast recipe you will find. Plus, it’s literally like having a mini banana bread loaf but in a cake form. Perfection.

These banana bread baked oats are warm, chocolatey, soft, and filling. This recipe is vegan and gluten free (if using GF-certified oats).

Let’s make banana bread microwave baked oats! Your mouth and tummy will thank me in the morning.

What are vegan microwave baked oats?

If you are new to the world of baked oats, welcome. You are never going back (warning you now!).

Basically, baked oats are a moist and smooth way to enjoy oats. If you are not a huge fan of oats because of their gooey texture, try baked oatmeal. It’s a lot easier to eat and almost cake-like (or bread pudding-like).

Banana microwave baked oats are even better because you can use the microwave rather than the oven, simplifying your life. These banana bread baked oats can either be cooked in the microwave for 1:15-1:45 minutes, or in the oven for 5-10 minutes. Whichever works best for you!

Baked oats can also be made in an 8″x8″ pan for meal prepping or for serving a large crowd, as in this other banana bread baked oatmeal dish.

How to make banana bread baked oats

In a microwaveable bowl, mash your banana until no lumps remain. Add oat flour (this is what makes it smooth!), baking powder, cinnamon, nutmeg, vanilla extract, maple syrup, and soy milk. Mix until combined.

*Note: if you don’t have oat flour, simply blend up some oats in a blender for 30 seconds to make homemade oat flour.

Then, mix in chopped walnuts and sprinkle chocolate chips on top, as well as remaining sliced banana.

Microwave for 1:15 to 1:45 minutes, or until set. You can also use an oven or airfryer and bake for 5-10 minutes.
