Run, don’t walk, to your kitchen to make these banana pancake bites! After seeing these mini pancake bites blow up on Tik Tok, I knew I wanted to make a version for my blog.

These cute little vegan pancake bites are so much fun and appeal to eaters of all ages. They’re basically pancakes in miniature form! Plus they are fruity in the inside and light.

You have to make banana pancake bites for your next brunch gathering, kid’s birthday party, or Sunday breakfast!

How to make pancake bites

These pancake bites take just minutes to throw together and just a few more minutes to cook.

  • In a bowl mix oat flour, mashed banana, and soy milk.
  • Add strawberry slices in pancake mixture one at a time, making sure the strawberry slice is completely covered in the pancake mixture.
  • Cook the bites in a greased non-stick pan over medium-high heat until both sides are golden brown, flipping halfway, about 3-4 minutes per side.
  • Then, serve with maple syrup, vegan yogurt, nut butter, or whatever your heart desires!

These pancake bites are stuffed with fresh strawberry, but they are also divine with stuffed bananas, as in this banana pancake bites recipe.

Bumping up the vegan protein in pancake bites

A complete breakfast for the average adult should include about 20g of protein. One mini pancake bites recipe is about 250 calories and provides 9g of protein.

To boost the vegan protein in pancake bites, try adding protein powder to your batter, serving your bites with nut butter, having a glass of soy milk on the side, or doubling this recipe.
