Caramelized Banana Peanut Butter Toast

Peanut butter and banana toast is one of my favourite breakfasts. It’s high in protein and healthy fats, and is so filling. But sometimes I just get bored of it, y’know?

Cue this caramelized banana peanut butter toast. If you are looking for a delicious way to spice up your boring toast, this is it.

Caramelizing the bananas and browning their natural sugars adds depth of caramel flavour while also making each bite just melt in your mouth.

How to make caramelized banana peanut butter toast

This vegan breakfast toast recipe is so simple:

  1. In a bowl, mix cinnamon, maple syrup, mix, and sliced banana. Toss gently with a spoon to coat the banana.
  2. Add banana slices to a pan with hot coconut oil and cook 3-4 minutes per side, until browned with crispy edges.
  3. While bananas are cooking, add bread to the oiled pan to toast at the same time. Cook until browned and crispy. Add more coconut oil if needed.
  4. Remove toast from pan and add 1 tbsp of peanut butter per toast and top with caramelized bananas. 

And then you can enjoy your decadent vegan breakfast toast!

High protein vegan breakfast ideas

You have probably heard the myth that you can’t get enough protein on a vegan diet. This is simply not true!

Ideally, you want to eat approximately 20g of protein per meal, including breakfast. Here are some of my favourite vegan protein sources.

● Tofu: 20 grams per 1 cup
● Tempeh: 15 grams per ½ cup
● Legumes: 14 grams per 1 cup
● Soy milk: 9 grams per 1 cup
● Quinoa: 8 grams per 1 cup
● Nut butters: 8 grams per 2 tbsp
● Steel cut oats: 8 grams per ¾ cup
● Whole grain bread: 7 grams per 2 slices
● Nuts: 7 grams per ¼ cup
● Hemp seeds: 7 grams per 2 tbsp

Try to include these in your breakfast. This caramelized banana peanut butter toast provides about 16g of protein, making it a pretty solid option to fuel your day!
