Cashew Tofu Stir Fry
This cashew tofu stir fry is buzzing with flavour, crispy tofu, roasted sweet potato, cashews, and tossed with a simple soy stir-fry sauce. It’s a perfect weeknight dinner or meal prep.
As always, my tofu cashew stir fry is vegan, but it is also naturally gluten-free and relatively low-carb when served with cauliflower rice.

Ingredients for tofu cashew stir fry
The ingredients you’ll need for this tofu with cashews dish are the following:
- Sweet potato: I keep the skin on my sweet potatoes for added fibre and nutrients.
- Tofu: Use extra-firm, pressed and drained tofu in this cashew tofu stir fry.
- Cashews: Use unsalted and roasted (not raw) cashews here for best flavour.
- Cauliflower rice (or any other base, like quinoa, white rice, brown rice, naan)
- Sauce: soy sauce, olive oil, maple syrup, garlic powder.
- Toppings: I use green onion for a pop of colour and garnish. Hot sauce is also great.
How to make cashew tofu
- Chop sweet potato and tofu into cubes.
- Make the sauce and coat the tofu. In a small bowl, mix soy sauce, maple syrup, garlic powder, and olive oil and add tofu to the bowl. Toss to coat.
- Bake or airfry the sweet potato and tofu. Cook until the potatoes are tender and the tofu is crispy. (about 20-25 minutes, flipping halfway).
- Meanwhile, heat cauliflower rice in the microwave in a bowl.
- Serve. Divide all between 3 bowls. Add ½ tbsp hot sauce per bowl. Top with green onions if desired.
