Chickpea Tuna Salad Sandwich
This vegan chickpea tuna salad sandwich (as seen on Tik Tok) is easy, healthy, and delicious. Of course, it doesn’t taste exactly like tuna, but it’s pretty close! My version has texture, mouthfeel, and heartiness that definitely mimics a tuna salad sandwich.
This recipe is also super customizable! I like adding capers, finely diced celery, and nori sheets (for that ‘ocean’ taste). Let me know what you add to your vegan chickpea tuna salad sandwich!
How to make a chickpea tuna salad sandwich
First, roughly mash the chickpeas with the back of a fork or potato masher. Using a flat dish helps with this step, instead of a round bowl. Mashing the chickpeas helps keep the salad together and gives a nice thick texture.
Next, add sliced cucumber to a toasted piece bread and top with a few scoops of chickpea mixture. Top with another slice of bread and enjoy. This recipe makes 2 chickpea tuna salad sandwiches.
And if you’re not a fan of tuna flavour, this ‘salmon’ salad sandwich also looks bomb!
