This vegan chickpea salad is a staple for me! It’s healthy, perfect for make-ahead lunches, and it’s a complete meal with tons of healthy plant-based protein. It’s also budget-friendly (I see you, college students) and easy to make.

How to make chickpea vegan salad
One of the keys to this salad is the homemade dressing. Homemade salad dressing is so much more affordable than store bought dressing. Making your own salad dressing also helps you avoid hidden additives, sodium, and preservatives.
This easy vegan chickpea recipe uses a salad dressing made of balsamic vinegar and olive oil. That’s it! For best results, use high quality ingredients.
The rest of the salad is composed of cucumber, avocado, tomatoes, chickpeas, basil, salt and pepper. The fresh basil really does a make a difference here, but if you just have dried basil it can also work.
What can you make from chickpeas?
I often get asked this question! Chickpeas, or garbanzo beans, are super versatile. In addition to this vegan chickpea salad, I always have a can of chickpeas on hand to whip up some hummus, a warm curry, or crunchy roasted chickpeas for a trail snack.
