This vegan lentil coconut curry recipe is an homage to Indian red lentil dal. Dal (or daal) is typically a side dish in Indian culture made of yellow split peas or lentils that are cooked with spices. It is soooo delicious, fragrant, and easy to make.

I also saw this delicious recipe on Tik Tok and immediately ran to my kitchen to start testing my own versions. For starters, my vegan coconut lentil curry uses canned lentils, making this a super convenient dish to whip up in a pinch. I’ve also added some spinach in this curry, for added micronutrients and a pop of colour!

Overall, this vegan lentil curry with coconut milk is made from simple, pantry-staple ingredients and is budget-friendly. If you are looking for a similar recipe using red lentils instead of canned lentils, try this vegan red lentil curry.

How to make coconut curried lentils

This red lentils coconut curry dish is ready in less than 30 minutes, which is the perfect amount of time to cook some rice to serve it with. If you can get your hands on some naan or roti, I highly suggest that too!

  • First, sauté onion and garlic and cook until soft. Then, add curry powder and tomato paste.
  • Stir in coconut milk, salt, and black pepper. Add spinach and cook until wilted.
  • Finally,  add lentils and stir until warmed through, about 1-2 minutes. Mix in some lime juice and serve with rice, naan, or roti. Top your coconut milk lentil curry with cilantro if that’s your thing.

1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, diced
1.5 tbsp curry powder
1 cup coconut milk (canned)
2.5 tbsp tomato paste
0.5 tsp salt
0.75 tsp black pepper
2 cups spinach
1.5 cup canned low-sodium lentils, drained and rinsed
1 tsp lime juice
Cilantro, to top (optional)

Directions

Heat olive oil in a nonstick pan over medium-high heat. Add onion and garlic and cook until soft, about 5-7 minutes. Add curry powder and tomato paste and cook until fragrant, about 30 seconds.

Stir in coconut milk, salt, and black pepper. Cook for 3-4 minutes. Add spinach and cook until wilted, about 2 minutes.
