This single-serving healthy apple crumble might just be THE easiest dessert ever. It’s basically a mini apple pie that you prepare in one bowl, microwave, and enjoy. PLUS, it’s healthy enough for breakfast. You heard me.

Healthy apple crumble recipe

For this crumble recipe, you start by combining a chopped apple, cinnamon, nutmeg, and tbsp maple syrup into a bowl or mug. Then, you microwave this for 2 minutes.

While that’s cooking, in another small bowl or mug, mix oats, cinnamon, coconut oil, maple syrup, and pecans. When that two-minute timer goes off, pour the oat mixture on top of the apples.

The last and final step is to cook for an additional two minutes to caramelize the sugar and cook the oats. And then ta-da! You have yourself a healthy apple crumble with oats.

Tips and tricks

Here are some suggestions to nail this recipe:

  • Dice your apple in small chunks. The smaller the better as they will cook faster.
  • Keep the skin on your apple for bonus fiber (and less work!).
  • Use rolled oats instead of quick-cooking oats. Rolled oats are an amazing source of fiber, plant-based protein, vitamins, and minerals!

Directions
