These plant based overnight oats are seriously hard to beat when it comes to a nutritious, filling, and protein-rich breakfast. With 500 calories, 12g of fibre, 4g of iron, and 20g of protein, this is a super healthy vegan overnight oats recipe!
Using soy milk in non dairy overnight oats is one of the best ways to boost the protein in your oats. Compared to water and other non-dairy milks (like almond), soy milk is much higher in protein!
This makes quick vegan overnight oats an amazing option for breakfast.
How to make pb&j overnight oats
Peanut butter jelly overnight oats are suuuper easy to make.
First, combine rolled oats, soy milk, vanilla extract, peanut butter, and maple syrup in a mason jar or bowl.
Next, add raspberries and gently mix in. Top with chocolate (if you want your pb&j overnight oats to be extra delish).
Then, keep refrigerated overnight or for a few hours. Add more fruit when serving if desired. And there you have it! Delicious, protein-rich pbj overnight oats.
