Okay these vegan PB&J bars are going to BLOW your mind. If you have never used a rice cake in energy bars, get ready because you are about to become addicted.

Rice cake bars are made with crumbled up rice cakes. This keeps the granola bars light and chewy, while also packing a nutrition punch. One serving of these rice cake bars contains healthy fats, protein, and fresh fruit. Literally, what more could you ask for out of a snack?

Oh – did I mention this healthy vegan bars recipe is also super easy to make?! Let’s dive in.

5-ingredient gluten-free PB&J bars

Whenever you crave something sweet in the afternoon or need an on-the-go breakfast, having these in the fridge will really come in clutch.

This vegan energy bar recipe was created to not be overly sweet, but if you have a bigger sweet tooth – use more chocolate chips or maple syrup.

For best results, I recommend using natural smooth peanut butter, rather than commercial sweetened peanut butter. And if strawberries aren’t in season, raspberries are also 10/10 in these rice cake bars.

0.5 cup natural smooth peanut butter
0.66 cup strawberries, diced
1 tbsp maple syrup
2 tbsp mini dark chocolate chips

Directions

Break apart rice cakes into a large bowl. Mix in peanut butter, maple syrup, diced strawberries, and chocolate chips.
Mark as complete

Pour rice cake mixture into a pan lined with parchment paper. Freeze for 2 hours, then cut into 12 bars.
