Vegan Black Bean Quesadilla

This vegan black bean quesadilla is packed with flavor thanks to cumin, garlic powder, hot sauce, and lime and is also rich in fibre and protein. And to make this black bean quesadilla vegan we use plant-based cheese. This hearty lunch is healthy and will keep you full.

How to make vegan black bean quesadillas

The first step in crafting hearty black bean quesadillas is to make the filling. In a bowl, mash black beans with a fork or potato masher. Then mix in cumin, garlic powder, salt, lime juice, and hot sauce.

The next step is to make your quesadilla over medium heat. Add a tortilla to the pan and top with guacamole, followed with black bean mixture and vegan cheese. Close it up by adding another tortilla on top and cook for 4-5 minutes per side.

You’ll want to flip your vegan black bean quesadilla to cook the other side. You know it’s done when it’s crispy and the cheese has melted.

1.5 cups canned low-sodium black beans, drained and rinsed
1.5 tsp ground cumin
1 tsp garlic powder
0.25 tsp salt
4 tsp hot sauce
1.5 tsp lime juice
0.25 tsp black pepper
4 small whole wheat tortillas
6 tbsp guacamole (store bought)
0.5 cup vegan shredded cheese

Directions

In a bowl, mash black beans with a fork or potato masher. Mix in cumin, garlic powder, salt, lime juice, and hot sauce.

In a pan over medium heat, add a tortilla. Top with 3 tbsp guacamole, followed with ½ black bean mixture and ¼ cup cheese. Add another tortilla on top and cook for 4-5 minutes per side (flipping the whole quesadilla over to cook the other side), until cooked through and crispy and the cheese has melted. Repeat a second time with remaining ingredients.
