When these vegan cucumber sushi rolls went viral on Tik Tok I just knew I had to make my own version!
Now don’t get me wrong, regular vegetarian sushi with rice and seaweed is divine. But, when you are looking for a 10-minute homemade lunch fix, this cucumber wrapped sushi comes in clutch.
These vegan cucumber sushi rolls are an easy, crunchy, and refreshing way to enjoy sushi flavours!
How to make cucumber sushi rolls
Making vegan cucumber sushi rolls is actually so simple. To start, slice a large cucumber in half and scoop the inside of the cucumber halves out with a small spoon. The idea is to make two long hollow tubes.
Then, you stuff your cucumber with sushi rice, avocado strips, and carrot slices. If you’re feeling like more, I suggest fresh mango, nori sheets, or cooked sweet potato fries. For more amazing cucumber sushi filling ideas, check out this other recipe!
Then, with a sharp knife, slice your cucumber into ½ inch thick pieces. If you start to notice your filling falling out as you cut, stuff in more rice and veggies where needed.
And then, voilà! You have yourself a vegan cucumber sushi roll plate!
