Easy vegan crepes

Easy & tasty vegan crepe recipe. Only 1 blender + 1 pan.

Ingredients

Crepe Batter

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2 cups vanilla soy milk
  • 2 tbsp canola oil
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tbsp canola oil COOKING OIL, (+/- depending on your pan)

MAPLE & CINNAMON APPLE TOPPING (OPTIONAL)

  • 3 medium apples, cubed
  • 1 tbsp canola oil
  • 1 tbsp maple
  • 1 tsp cinnamon

ESSENTIAL topping 😂

  • 4 tbsp Maple syrup (1 tbsp per portion) Adjust according to taste!

Instructions

CREPE BATTER

  • In a blender, mix all the BATTER ingredients
  • Add 1 tbsp of canola oil (cooking oil) in a pan & cook at medium-high
  • Add approximately 3/4 cup of the mixture in the pan, rotate the pan to even out the mixture over the pan.
  • Cook until you see bubbles appearing & the surface of the crepe seems drier (about 1-3 minutes, depends on your oven and pan). Then flip the crepe and cook for about 1 minute. Put the crepe to the side and repeat

MAPLE & CINNAMON APPLE TOPPING (OPTIONAL)

  • Preheat oven to 375 F
  • Mix all the ingredients
  • Line a baking sheet with parchment paper and spread the apples evenly on the baking sheet
  • Bake for 15 mins, mix every 5 mins. Cook until apples are golden.
